Fried Green Banana Fritters

Did you know you can eat bananas at almost any stage of ripeness? It's true! Treat green bananas like a potato and cook them before you eat.  Fry them, boil them, stick them in a soup, really! And they taste vaguely like a potato too; starchy, without any sweetness.  We've been eating a lot of bananas lately and since I promised more banana recipes, I thought I'd share this one for Fried Green Banana Fritters with you.

Get your bananas ready!  I used 6 for this recipe.

Start by slicing the bananas with skin on. (Sorry for the blurry cell phone pics.) Green bananas don't peel easily, and the peel itself is very sticky with sap.

To get around that, cut the peel off with a knife.

Place banana slices in a pot of water and bring to a boil.  Continue boiling for 20 minutes, or until bananas are soft and fall apart when stuck with a fork.

Have a glass sitting in a shallow bowl of water ready to smash these puppies.

In a deep pan heat about 1 cup of oil.  Fry smashed banana slices about 3 mins on each side, or until golden.

Remove from pan onto a plate, and sprinkle with cinnamon and sugar. Enjoy with friends!
