Good Eats
I have been trying to eat more vegetables lately. Something about baking cinnamon rolls every week is probably not the healthiest form of income. (We are selling them at the Whole Foods market around the corner, but there's always a few left over from each batch.)
Finca La Querencia is a community supported farm and sustainable multi-family homestead, and they sell great organic produce. For $5 per week we get a bag of veggies - whatever they are harvesting on the farm that week - and they get money for more plants, or feed for their animals. We also order fresh bread, and homemade yogurt from them. So delicious!
I have enjoyed using a variety of vegetables that I normally would not buy myself. This week I made fried eggplant, which was kind of like a cross between fried green tomatoes and a hush puppy. I also made a green chili lime sauce to go with chicken and rice one night. We also got a bunch of kale, some lettuce, tomatoes, and green onions.
It is not always easy to use everything we get though. One week we got some fresh lemongrass which was awesome, but after using it in tea, soup, and stir fry I still had over half the bunch left when we had to clean the fridge to move out. Unfortunately the lemongrass did not make it to our new home.
The cool thing about getting veggies every week is that I know I will have another bag in seven days. It motivates me to use what we get quickly so I don't get overloaded with stuff and/or don't let them go to waste. Beans and rice are a good place to use fragrant herbs, onions, peppers and tomatoes. Kale is great sautéed in bacon drippings or in soup. Actually, soup is my favorite place to use any veggies that are leftover at the end of the week.
All that to say, I am trying to eat more vegetables lately. Next, I will attempt to eat fewer cinnamon rolls. Baby steps.
